Menu Plan Monday

I had big plans this week to stay on budget and use a ton of coupons. It didn’t go so well.
I did, however, stay on budget. $100.00 for 2 weeks. I already had a stocked pantry and a pretty good start in my freezer. So all I really needed was to put together a list of recipes and shop for the ingredients I needed. I walked into Kroger’s armed with coupons and was very disappointed. Many of the items I had coupons for I couldn’t find in the store. I’m not sure they carried the brand. I was in the right section, just didn’t see the product. Also, many coupons were for 2 items to get the $1.00. This wasn’t a good investment for me since my primary goal was to stay on budget, more so than to score a great deal. So I passed many items up just because I didn’t need 2. Like I said, I’m stocked up for now.
So here is what I came up with for the next 2 weeks of dinners.
2. Sloppy Joes & Mashed Potatoes w/corn
3. Shrimp Asparagus Stir Fry (frozen meal)
4. Tuna Melts with Pasta Salad
10. Teriyaki Stir Fry (frozen meal)
12. Faux Fried Chicken w/Mac-n-Cheese
13. Chicken Alfredo
14. Oriental Stir Fry (frozen meal)

I’m a bit late getting this posted, but I’m trying to find the time to menu plan and get back to blogging!

Meatless Monday – White Turkey Chili (it turned out pretty good, except that I didn’t have the jalapeno it called for.) Oh yeah…I didn’t succeed for the meatless part, I added ground turkey, but I think you could have left it out.
Tilapia Tuesday – Orange Ginger Soy Tilapia
Chicken Wednesday – Chicken Pot Pie
Turkey Thursday – Parmesan Sage Pork chops. Normally I would cook ground turkey on Thursday, but I used it up on Monday. I have Pork Chops, so that’s what I’m going with!
Fishy Friday – Steak. I’m all messed up this week! Steak it is! Probably have this will Dill Potatoes

So there it is!

Menu Planning Monday

I’ve been so tired (or lazy) from the pregnancy that when the time comes to cook dinner I simply don’t have the energy. So I’m planning my menu ahead of time in hopes that I can get my meals ready and my family won’t starve! lol!

Monday (meatless) – Black Bean, Zucchini & Tomato Quesadillas
Tuesday (tilapia) – Foil-Pack Tilapia with Lemon, Rosemary & Tomato
Wednesday (chicken) – Hawaiian Chicken Skillet
Thursday (ground turkey) – Hamburger Casserole
Friday (fishy) – Tuna & Sweet Potato Patties
Saturday – Zucchini Lasagna (no noodles)

So there it is! I hope I actually accomplish each meal this week! Wish me luck1

Menu Plan Monday

I’ve decided to try and plan 2 weeks of Menu’s at a time to keep myself from going to the store and expanding my monthly grocery budget. So I went through my freezer and pantry and wrote down the meats I had and how many servings I would get out of it. From there I went to RecipeZaar and began searching for recipes. So, without further ado…here is what I came up with:

Monday: Spinach & Chickpea Curry
Tuesday: Chili Tilapia
Wednesday: Crockpot Chicken w/black beans & cream cheese
Thursday: Mandarin Pork Chops
Friday: Company Pork Roast

Monday: Chickpea-Quinoa Pilaf
Tuesday: Crockpot Polish Sausage w/apples & kraut
Wednesday: Scalloped Potato & Ground Beef Casserole
Thursday: Crockpot Chili Pork Chops
Friday: Pepsi Crockpot Bacon Pot Roast

Now the hard part of all this will be to make sure I thaw out the meat the night before so it will be ready when I need it. This is why we turn to fast food more often than we should…my lack of preparation. As for the side dishes for these dinners…I guess that part I’ll figure out as I go! Wish me luck!

My goal for the weekend was to plan out a month’s worth of recipes…I didn’t get it done, but I will at least plan this week. I’ll go from there.

Monday:Mediterranean Eggplant (Aubergine) Casserole
Tuesday: Crunchy Baked Tilapia
Wednesday: Cheddar-Garlic Oven-Fried Chicken Breast
Thursday: Southwest Spaghetti Squash
Friday:Scalloped Potato and Ground Beef Casserole

I hope I’m able to pull all this off! lol!

Monday (meatless): Chickpea Burgers with mac ‘n cheese (with pureed cauliflower)
Tuesday (tilapia): Raspberry Tilapia with asparagus
Wednesday (chicken): Mustard Balsamic Chicken with mushroom/rice
Thursday (ground turkey): Ground Turkey Tortilla Casserole
Friday (fish): Pretzel Tilapia with scalloped potatoes

Tomorrow is Cohen’s 3rd birthday so we probably won’t even get around to dinner. After cake and ice cream I don’t think anyone will be in the mood for my chickpea burgers! lol! At least I have a goal for this week. I’ve found that if I don’t create a menu then my family ends up eating pancakes or cereal for dinner. This is much better. My husband LOVES coming home to a meal on the table instead of bowl of cereal…who wouldn’t? I didn’t have the time or energy to come up with a weeks worth of new 5 star recipes so most of these are recipes we’ve tried and loved. I hope you enjoy them too!

Here’s my menu plan for this week. I’m not sure if I’ll stick with it, but at least I have a plan!

Monday (meatless) – Honey Baked Lentils
Tuesday (tilapia) – Baked Tilapia with Lots of Spice
Wednesday (chicken) – Crock-pot Creamy Mexican Chicken
Thursday (ground turkey) – Beef Enchiladas
Friday (normally fish, but I’m out.) – Mandarin Pork Chops

I have no idea what my sides are going to be yet, but I’ll just wing it. :-)

Menu Plan Monday

I didn’t get around to posting this on Monday, but here goes:

Monday (meatless): Mediterranean Chickpeas with Vegetables. This turned out really good. We all really liked it. I served it with Brown Rice and I did use fresh Parmesan Cheese. Yum!

Tuesday (tilapia): Parmesan Tilapia with Roasted Butter Beans. The Tilapia was heavenly! Even the boys ate it. However…the butter beans, I should have followed the directions better. I added WAY too much sage. If you’re using ground sage instead of sage leaves use only 1 Tsp. Hubby still liked them, he even had seconds.

Wednesday (ground turkey): Homestyle Turkey Meatloaf with Corn on the cob and Mashed Potatoes. (I just posted the recipe to recipezaar but it will take a day or two to be approved)

Thursday (chicken): Peach Ginger Glazed Chicken with whole grain pasta & salad

Friday (fish/shrimp): Pina Colada Shrimp & Rice

I’ll let you know how it all turns out!

Monday: Low Fat Creole Style Black Eyed Peas (Vegetarian Too!) in a wrap
Tuesday: Moroccan Salmon with Lemongrass & Ginger rice (from a box)
Wednesday: Chicken Alfredo with dinner roll
Thursday: Mango Mustard Salmon (I’m using frozen mango) withPineapple couscous (I will substitute the pineapple with mango)
Friday: Crunchy Ranch Chicken Fingers with buttered corn and dinner roll (I didn’t get around to making this last week, so it’s on here again.
Maybe this week I’ll actually get around to making all my recipes. I’ll try to post pictures. I’m not sticking to my regular weekly items because I’m trying to use up what’s in my pantry and freezer.

Friday: Salmon or Shrimp
Monday: Chickpea Burgers with Duchess Potatoes and zucchini
Tuesday: Sarah’s Tilapia with white rice and summer squash
Wednesday: Crunchy Ranch Chicken with buttered corn and biscuits
Thursday: Spaghetti with Turkey Meatballs (from Aldi)
So that’s it! I hope you try some of these with me!!!
